Bracing for A stormy Evening!

Severe weather ,with a 40% chance of tornadic activity this afternoon is predicted by the national weather service. We will get a cold front with possibility of sleet tomorrow. That's the way it is in Louisiana. Right now,the weather channel has just posted a tornado warning for an area near Natchitoches,LA.There was a 6/10 torcon predicted for that area today by the weather channel.

I'll be turning off my computer's power in a bit. For some reason, my battery will only last less than one hour without a recharge. Can't afford a new one,I suspect. Never bought one, so I have no idea what the cost is.

I changed a few things in the house today from fall to December decor, and will do a little most days until it is time to put up the tree. The time I put up the tree is when I get a whim after Thanksgiving...and so far...I'm not feelin' it.Nope..not one little whim. Mama,daughter and I will hit the malls in a day or two, and that might do it. Need it to get cold, and then I'll  play some fa-la-la-la-la music, and deck the halls! How abot YOU? have you started getting things all festive for the Christmas and/or Hannukah season?

I made some whole wheat bread today. I used a  small ball of for a 10 inch pizza for daughter and I to go with the spaghetti I cooked for lunch.The rest of the dough was used for a loaf of bread. I use those disposable pans, because they don't stick as much as the glass loaf pans. You can just give the pans a pull, and the bread is out, and intact. Below: When I made this bread  at my daughter's house,I got lucky and it came out fine.(Whew..nothing like stuck bread when you're trying to show off!)
I made this loaf of bread on 11/11 while my daughter was in the hospital for the
grandkids and S-I-L.
 Ah, the bread is cooling a bit now, and what an enticing smell it is! More pungent than white flour bread. I will take it next door to Mama's house later. A thick slice will go good with some hot tea.

Update: IT WAS HEAVEN!After I posted this, I looked at some breadmakers on Amazon.com. These are the three I like. I AM NOT TRYING TO GET CLICKS!!! Just want to show you what I was considering. Does anyone have any recommendations from your own experience? My friend in TN has a catering business and has a nice one, but I can't afford the top dog!

Happy Thanksgiving USA!



Happy Thanksgiving!
I'm thankful for HIS  Amazing Grace!


I am so thankful for God's amazing grace! I thank him for being my heavenly Father, and for my wonderful family  and church family! Last Thanksgiving I was very ill ,and ended
up in the hospital for five days. I am so thankful
for the improving health I have today! (And...Lord....I love being retired ,after all! You ,of course,were right!)

I am thankful most that God loves us, and when we stumble ,if we let Him, He will pick us up!
 Happy Thanksgiving USA bloggers! I won't be on much, and  I suspect you won't be either. I will be editing this post later to add a few recipes popular in my family for our Thanksgiving throw down asap...(We in my family are all good cooks. WE could whup up on ole Bobby Flay!)
UPDATE: Recipes as promised!
       Corn casserole
(Are you right with God? Cause
this one might kill you!)
2 cups of frozen whole kernel corn
1 package of Mexican cornbread mix
1 beaten egg
1/2 stick of melted butter
8 oz of med. ceddar cheese,shredded
4 oz of jalepeno jack cheese,shredded
optional sliced jalepenos(How hot do
you want it? I use 3 tablespoons of sliced jalepenos.)

TACO SALAD

Add water or milk to make a soupy consistency
Mix well and pour into a glass baking pan.

Bake @ 400 degrees  in a glass pan (so you can make sure it's not burning on sides)until browning on top. You may need to lower temp.(Time /temp depends on your oven. It's about 45 minutes in mine)

Serving suggestions: For other occasions you might try serving refried beans and a taco salad with meat.
For holidays,it goes well with almost any traditional menu.

                                                         Louisiana Diced Potato Salad
A southern cook will tell you, it's all about a little taste here and there to get a potato salad tasting just right. Have a few spoons ready for tastin' and deciding about stuff...especially the the salt...Still some will say,"Not enough salt." Others will say,"Jeepers! You stumped yore toe on the salt." (That's southern for "you must have dropped the salt shaker in it!")

PREP:****Wash  and Boil (a 5 lb bag) red potatoes  with skins and cool six hours.  Cut cooled   potatoes   into small squares about 1/2 in by 1/2 inch.
       *****Boil 8 eggs and cool/peel and chop.

                                             MAKING THE SALAD:
In a large bowl, mix the potatoes eggs, 1 cup of chopped celery,1/2 cup of chopped green onions,about 1/3 cup of diced pimentoes,1/2 cup (or more!) of dill pickle relish.Add 1teaspoon of high quality garlic powder,and 4 tablespoons of Mrs. Dash 's Original Seasoning)
Now add a 4 to 1 ratio of 4 parts mayo to one part mustard.(Ex: 4 oz mayo and 1 oz mustard.  I use a tart mayo like KRAFT or HELLMAN'S.)
NOTE: How much of the mayo-mustard mixture you use depends on how you like your potato salad,dry or wet. I use enough to make my salad just before being creamy.It's a preference thing.)
TASTE. Now add salt according to your taste. It's hard for me to say,because I use very little. I used to 'stump my toe." Remember......please yourself on the salt thing!

For those not from the USA , Thanksgiving is a super big holiday here, with at least ONE major feast. (Who am I kidding? )We take days to prepare it, and eat it for days!

Back Home and Gonna Catch Up With My Thank Yous!

Hello to all of you wonderful well-wishers and prayer warriors! Thank you,thank you,thank you! I am home in Louisiana , and oh my! It's my little piece of the world and I'm so happy.Be it ever so corny a saying there IS no place like home!

My Daughter Is Better!


                                     Thank you all for your prayers! My daughter is better. She returned to the surgeon today, and the pathology report from the removed thyroid showed no malignancy. The choking and pain she is experiencing is sometimes an unfortunate part of the thyroidectomy and the accompanying swelling from the procedure.The doctor told her not to go back to her classes until after Thanksgiving, no lifting,housework, or streneous activity.


I made some spanish rice , refried beans, and spinach salad with bacon /ranch dressing. She ate very carefully in tiny bites and actually even managed the salad. Now she is on the sofa watching HGTV........instead of sleeping 12 hours a day. the doc said the excessive sleepiness is from the double whammy of the surgery and the synthroid medication she is taking. She told me that she will be careful and follow the doc's instructions after I go. Well,she better~~~~Jackie~~~~!

I'm Visiting In Beautiful Alabama!

Last Monday I arrived at my daughter's home in beautiful northern AL. (Beautiful Alabama!Especially in the fall. The color pallette of the trees on the mountains is simply breathtaking!)

I came to be with my daughter at the hospital for a few days for her thyroidectomy  and the three grandchildren. Of course the grandchildren have so many menu requests until I spend a considerable amount of time in the kitchen!

Every day since she can home I intend to blog, but it's hectic here! My daughter was doing well, and I was supposed to go home today. Unfortunately,she has had a setback, and now I will be here a while longer. We are waiting for her surgeon to return her call. She's dozing, and I am worrying and praying!

What Person Thinks WD 40 Ingredients Are Mainly Fish Oil? .....Duh. Read the Label!

Got the craziest e-mail a few months ago. It was not an attachment, because they put the letter  in the body of their e-mail/letter..(Y'all know I don't open forwards anymore.(long story)I skimmed over it , and because it looked interesting, I copied it. It listed about 45 uses for WD40. Some of them were ridiculous and dangerous!

Well,the other day, I had a bit of a problem getting the windows up and down on the metal track.  Daddy always said hold it with duct tape, and get it loose with WD 40, so I got out my trusty WD 40.................................read the rest  of  it here. I did a little research(took me two days! )that you might be interested in. (Sorry, I haven't learned html, so I still do it the old fashioned way!)

Getting together with the sibs and their families at Mama's house tonight. She's making her famous pot roast with onion gravy. I am making butter beans (frozen) and jalepeno cornbread.

                                        
 Jalepeno Cornbread

To make jalepeno cornbread, I use a package of Matha White's Mexican Cornbread Mix prepared according to directions. In another bowl , I make a small batch of regular cornbread. from scratch. Next, I mix them together , and add 4 ounces of Jalepeno Jack cheese, 1/3 cup of sliced jalepenos, and crumbled bacon.(A lot or a little, depending on what's on hand.) If I am out of bacon, I use real salad type bacon bits. Crumbled sausage is also tasty. You can't go wrong by adding chopped green onions and drained whole kernel corn as well!
                                                                          Onions? Shoot, yeah!
